adapted from this recipe
- preheat oven 400F
- clean and cut off stems of 2 portabella mushrooms.
- place face down on aluminum foil and bake 15 min
- remove mushrooms from oven and top with a few tsp salsa mixed with a bit of tomato paste
- top with feta and some mixture of shredded cheese (i used a mexican blend)
- top with sliced bell peppers
- return to oven for 10> min
that’s it!
should’ve made this for st. paddy’s day.
