Cranberry + Hazelnut Stuffed Acorn Squash

INGREDIENTS

  • 1 acorn squash, cut in half top to bottom
  • ~ 1 cup rice, pre-cooked (i used a korean brand mixed grain. left overs are great.)
  • 1 shallot, minced
  • 1/4 small yellow onion, minced
  • 1/2 tsp allspice
  • 1 tsp nutmeg
  • 1-2 tsp parsley
  • 1 bay leaf
  • 1/4 cup hazelnuts+ almonds, toasted and chopped
  • 1 tbs pumpkin/pepita seeds (optional)
  • 1/4 cup cranberries
  • chicken broth
  • apple juice (optional)
  • 1 tsp butter
  • truffle salt (normal salt is fine..)
  • hard, grate-able cheese. a nutty gouda, for example.

INSTRUCTIONS

  1. spoon out seeds and crap from halved squash.
  2. fill small baking pan with ~1/2 inch apple juice or chicken stock
  3. place squash, cut side down, on pan and bake @ 400F ~30 min.
  4. in frying pan, melt 1 tsp butter and saute onions and shallots ~ 5 min until soft.
  5. add cooked rice and a dash of chicken stock to soften it up, and mix in seasonings.
  6. mix until rice is reheated through (mine was cold from the fridge), then add cranberries and a dash of chicken stock if necessary to soften ~2 min. remove from heat and set aside.
  7. remove squash from oven when 30 min is up. turn them over and spoon out extra flesh to make a even rounded bowl for stuffing. mix excavated squash in with rice/onions. salt to taste.
  8. add hazelnuts, pepitas, etc to stuffing at the end (i dont like soggy nuts. excuse the imagery)
  9. spoon and pack in stuffing.
  10. grate cheese liberally over top (you want a nice crust.) if you really like cheese, grate and mix some in with the stuffing before spooning it into the squash.
  11. pop in oven for 5 min to melt cheese. should be golden brown on top.
  12. serve!

i ate mine with left over roasted duck. i love how salty/sweet always goes well with duck. the smokiness of the cheese also compliments the duck perfectly.

as you can see, i only have 3 pieces of duck with my squash. this is because someone got to my duck before i got home.

but that’s ok. i got two halves of the squash to myself because the aforementioned thief was already full from his loot.
